Lebkuchen und Glühwein - our recipes for Christmas!

In Bavaria especially, but this also applies to most of Germany, Advent is a time of great culinary importance. Some pastry products like “Lebkuchen” (soft gingerbread) are only available at this time of the year. Accompanying “Glühwein”, a fruity and spicy mulled wine served hot, they are an essential part of what constitutes Christmas in Bavaria.

Here are our favorites recipes. Enjoy them in front of a cosy fireplace, listening to Christmas Carols!

"Glühwein" (ca. 1L)

Heat up about 400 mL of water with 2 black tea bags, cloves and cinnamon sticks. Add the following ingredients:

  • ½ L red wine
  • 100 mL orange juice
  • 25 mL rum
  • 25 mL Amaretto
  • 2 c.à.s. honey
  • 1 c.à.s. sugar
  • lemon juice concentrate to your taste

"Honiglebkuchen" (honey ginger bread)

  • 450 g honey
  • 250 g sugar
  • 500 g flour
  • 3-4 eggs
  • 2 table spoons raisins
  • 50 g candied lemon peel
  • 50 g candied orange peel
  • 10 g gingerbread spices
  • 2 teaspoons baking powder
  • 25 g whole almonds
  • 125 g whole hazelnuts

Warm up the honey  (it has to turn liquid). Add all the other ingredients with exception of almonds and hazelnuts; Knead the dough until it’s homogenous.

Spread the dough on a baking sheet and decorate with nuts. Bake for about 40 minutes in a 150 ° C oven.

Put on some sugar-glaze while warm.
